I love that the menu they give you in person is clearly labeled with gluten free options. I usually get the cobb salad with chopped chicken breast. The presentation is beautiful and it is delicious. For a healthy alternative swap out the blue cheese dressing for olive oil and balsamic vinegar. Other healthy dining suggestions are the mesquite-grilled salmon perfectly cooked to perfection or the additional side of asparagus or rainbow cauiflower.

- 6 medium plums
- 1/2 cup buckwheat flour
- 1 cup ground almonds
- 1/4 cup arrowroot
- 1/2 cup desiccated coconut
- 1/2 cup coconut sugar
- 1tsp baking powder
- 1tsp bicarbonate of soda
- 1tsp cinnamon
- pinch of sea salt
- 2tbsp ground flaxseed + 6tbsp water
- 1/3 cup olive oil
- 1/2 cup almond milk
- 2tsp apple cider vinegar
- 1/4 cup flaked almonds for topping
- Preheat the oven to 350°F
- Prepare 12 hole cupcake size tin with cases.
- Mix 2tbsp of ground flaxseed with water and set aside to thicken.
- Slice the plums into 6 slices each and set aside.
- Large bowl: whisk together buckwheat flour, ground almonds, arrowroot, desiccated coconut, coconut sugar, baking powder, bicarbonate of soda, cinnamon & salt. Set aside
- Small bowl: whisk together olive oil, almond milk, apple cider vinegar and flax eggs.
- Add the wet mix to the dry mix and mix until well combined. Gently fold in plums.
- Spoon the mixture into the prepared cases distributing evenly. Sprinkle flaked almonds.
- Bake for about 30-35min or until a cocktail stick comes out clean.
- Remove from the & leave to cool down for 10 min before moving onto a wire rack
