Easy Orange Muffins Recipe (Vegan, Gluten Free, Dairy-Free)

Easy Orange Muffins Recipe (Vegan, Gluten Free, Dairy-Free)
Equipment
- Sifter and Zester
- Juicer (Hand or Electric)
Ingredients
Dry Ingredients
- 2 ¼ cups gluten-free oat flour
- ½ cup finely ground blanched almond flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon Himalyan pink salt
Wet ingredients
- ½ cup water
- ½ cup non-dairy milk
- ¼ cup fresh-squeezed orange juice
- 3 tablespoons zest about 1 large orange
- 3 tablespoons melted coconut oil
- ¼ cup of coconut sugar
- ¼ cup pure maple syrup
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F. Line a 12-cup muffin pan with cupcake liners. Set aside.
- In a large bowl, sift together all the dry ingredients: oat flour, almond flour, baking soda, baking powder, and salt.
- Add water and milk to a microwave-safe bowl. Heat in 10-second increments until just warm. This will prevent the melted coconut oil from solidifying once mixed with these liquids.
- In a medium bowl, whisk together all wet ingredients: water, milk, orange juice, orange zest, oil, sugar, maple syrup, and vanilla. Whisk until well incorporated.
- Add wet ingredients to dry ingredients. Whisk until just incorporated, making sure no flour patches remain.
- Pour batter evenly into prepared muffin pan—filling each cup all the way to the top for big, round tops, and ¾ of the way for a larger quantity of smaller muffins. Bake for 22-26 minutes. Insert a toothpick to check for doneness—once it comes out clean, it’s done.
- Place muffin pan on a cooling rack to cool for 20 minutes. Remove muffins from muffin pan and enjoy!

I like to sometimes add the glaze on top with a sprinkle of zest for presentation. Glaze Recipe from Bakerita
INGREDIENTS:
3 tablespoons coconut butter, melted
1 tablespoon maple syrup, optional
2 to 3 tablespoon orange juice
DIRECTIONS:
For the glaze: whisk together the melted coconut butter, maple syrup, and 2 tablespoons orange juice. Add more orange juice to reach desired consistency. Drizzle over the muffins as desired.
I enjoy these orange muffins sometimes for breakfast or a snack when I make them in the mini size. I love to pair the taste of the orange with one of my favorite teas – Smith’s No. 67 Blend – Meadow. I first discovered this tea at Haute Cakes Caffe in Newport Beach and have now ordered it from Amazon ever since. This tea is a caffeine-free blend of golden Egyptian chamomile flowers, fragrant hyssop, smooth Cape rooibos rose petals and linden flowers.

Orange Julius Popsicle (Vegan, Gluten-free)
Ingredients
- 2/3 cup coconut milk regular full-fat
- 2 cups freshly squeezed orange juice
- 1/8 tsp vanilla extract
- 1/2 ripe banana or more to desired taste (don't overpower the orange)
- 1/4 tsp orange zest
- pure maple syrup (optional), to add additional sweetness as needed
Instructions
- Mash the banana with a masher or spoon to a smooth consistency.
- Add all the ingredients into a bowl and mix together until smooth. (I left some very small banana chunks to mix in. However, if you want the ingredients to be in a pureed state put everything in a blender to make it completely smooth.)
- Depending on the sweetness of the fresh orange juice, you may need to add some pure maple syrup to taste to adjust the sweetness of the popsicles (the organic oranges I had were very sweet, and therefore I did not need any maple syrup).
- Pour into your favorite popsicle molds, freeze, and enjoy!

The trick to removing the frozen popsicles from these 100% BPA free molds is to run some warm/hot water over it and they slide right out! No more sticky fingers and the molds are easy to clean and store.

Summer Salad with Orange Citrus Dressing

Ingredients
For the Salad
- 1 cup baby kale
- 1 cup baby spinach
- 1 cup romaine lettuce
- 1 ripe avocado sliced
- Handful toasted hazelnuts or almonds coarsely chopped
- Garnish strawberries, blueberries, cucumbers sliced
For the Dressing (recipe from The Fitchen)
- 1/3 cup freshly squeezed orange juice about 1.5 oranges
- 1/2 tablespoons raw honey
- 2 tablespoons white wine vinegar
- 1/2 tablespoons extra virgin olive oil
- ¼ teaspoon Himalayan Pink sea salt
- ¼ teaspoons fresh black pepper
Instructions
- Make the dressing by whisking together all the ingredients until the dressing is well combined.
- In a large bowl toss together the kale, spinach, and romaine lettuce. Top with avocado slices, nuts, berries and, cucumbers. Drizzle or mist salad dressing on top and serve immediately.

Dark Chocolate-Dipped Orange Slices
Equipment
- Microwave
Ingredients
- 2 medium-sized oranges
- 9 tbsp dark chocolate chips vegan & gluten-free
- 2 tsp coconut oil melted or solid
- 2-3 tbsp goji berries
- 1 pinch pink Himalayan salt
Instructions
- Wash the oranges, slice them at 1/4 inch thick rounds and freeze them for an hour. It’s a lot easier to dip fruit in melted chocolate when the fruit itself is frozen. It also makes it easier to dry/set.
- After the oranges are frozen, melt the chocolate in the microwave 30 seconds at a time. Once the chocolate is melted, add the coconut oil one teaspoon at a time, while stirring. You will notice that the chocolate mixture will suddenly get thinner and easier to stir because of the coconut oil.
- Dip each orange into the chocolate. Get creative on how much chocolate you want on your orange slices to make your design.
- Lay the orange slices on a baking sheet with parchment paper. While the chocolate is still wet, add a sprinkle of pink salt and 3-4 Goji Berries.
- Once all orange slices are coated in chocolate, Goji Berries & pink salt, place the baking tray into the freezer or transfer carefully to a smaller plate and let the oranges set.
- Store in freezer in a silicone sealed bag, or glass container till ready to serve.

Materials
- 1/2 cup orange juice
- 1/4 cup organic, full-fat plain yogurt
- 1 banana
- 1 tbs honey
Instructions
- Measure and combine the orange juice, yogurt, banana, and honey in a blender or food processor.
- Blend until you've got a really creamy paste. Banana chunks are notoriously hard to remove from hair, so keep your finger on that blender button until the mixture has a supersmooth texture, like that of conditioner.
- Use your hands to slather the mask onto your dry hair. Don't be afraid to really pack it on , saturating the strands from roots to ends.
- Put a shower cap to keep the mask in place and prevent drips, then meditate or read for about 15 minutes. Rinse throughly and follow with shampoo.
